Here's what the inside of the Polyend Tracker looks like. It runs on an ARM Cortex M4F design from NXP.
Also worth noting this part is the same as on the Teensy 3.6, so... Trackerduino, perhaps?

I didn't realize that the polyend was using cherry mx style keys... and are the buttons basically adafruit trellis pads?
@jonbro absolutely! I love taking stuff apart :) for science, of course.
The Trellis grids are squishier, I think. These are relatively hard, and not pressure sensitive.
