Making Italian style chicken soup today! I bought a rotisserie chicken from Costco on Wednesday and I'm using the bones and breast for meat and stock!

Starting off by roasting the bones and some veggies (garlic, onion, parsnip, turnip, carrot) at 350F for about an hour in a lil olive oil and kosher salt

Prepping some veggies that wont be going in the stock while the other stuff roasts. Carrots and celery in one bowl, onion and garlic in another, and some chopped parsely for finishing. The scraps bowl will be thrown into the stock though!

Throwin the contents of the scrap bowl into a big pot, gonna be the fresh flavor notes of the broth. Also added some salt, peppercorns, two bayleafs for flavor

20 cups of water added, now gonna let it boil for like... 4 hours, see you then!

Update time: 2.5 hours seems to been enough, gonna strain it out now

Time to make some soup!
Starting with the onions and garlic in a bit of bacon fat (for depth of flavor), then tossing in the carrots and celery, finally dump all the broth back into this pot lol

Another ingredient to add: chicken breast! I cubed and froze this when I got the chicken (it's about a lb and a half's worth) so it wouldn't go bad. (It's pre cooked dont worry) t.co/5dmXfGxP99
