Basmati rice with peas, onion, and cumin. I like the delicate colours.
1 cup rice
1 1/2 tbs vegetable oil
1/2 tsp cumin seeds
a small onion, chopped
1 cup frozen peas
1/2 tsp salt
1 1/2 cups water
Wash the rice. Heat the oil in a small pan over a medium heat. When hot, add the cumin seeds and stir for a few seconds. Add the onion. Stir and fry until flecked with brown spots. Add the peas, rice, and salt. Stir for 2-3 minutes until peas and rice are coated with oil. Add water. Bring to the boil, cover tightly (I put a piece of foil under the saucepan lid), and cook on a low flame for 10 minutes. Stir gently before serving.
