@Lou the whole „gender is a spectrum“ thing might be an okay analogy for talking with people who know nothing about gender but it’s terribly inaccurate.
People may have any number of characteristics that are usually seen as part of one gender but still have one that’s not even close to it.
It’s more like choosing toppings for a sandwich, where they can lie anywhere before you take them but still make up your finished and amazing gender.

No offense but gender does not have "two ends". It is not linear. Some enbies are at one or more places on a "male/female" scale but most are taking a third (or fourth, or fifth,...) option -- or are somewhere between a binary gender and said third option.
Please keep in mind that the term "non-binary" itself is a bit of a catch-all for people who don't fit into the rigid binary of a cis-centric gender model.
